I call these “Almond Brownies” when I offer them to my 4-year-old son Zach, since it’s easier for him to understand than “Raw Cacao Truffles.” These happen to be his favorite Beauty Detox Recipe, probably because they do not contain vegetables. : ) They do have many other nutritious ingredients, so I like being able to offer him these as a snack or dessert.
These are a variation of Kimberly Snyder’s recipe for Raw Cacao Truffles. You can find the original recipe here: http://kimberlysnyder.net/blog/2009/02/11/raw-cacao-truffles-for-valentines-day-or-any-day/ or in The Beauty Detox Solution.
My variation is a 10-minute version of the recipe. It requires approximately 10 minutes prep time, 0 cooking time (although brownies “set” in the fridge for 2 hours).
Outcome: Everyone in my house eats these. My husband, son and I love them. My daughter has been tasting them as well and seems to like them.
- 2 cups raw almonds (blanched– “white,” not with skin)
- 3/4 cup cacao powder
- 6 dates, pitted
- 1/2 cup raisins
- 1 tbs. coconut oil
- pinch of celtic or sea salt
- 1/4 cup water
- 1/2 cup maple syrup or honey
- 2 tbs. molasses (optional)
- 1 cup unsweetened coconut flakes (optional)
First grind the almonds in a food processor, then add the rest of the ingredients (except the coconut flakes). After everything is blended well, add the water and blend again. Spoon the mixture into a small pan and flatten (I use wax paper so I don’t get too messy). Sprinkle the coconut flakes on top. Put them in the fridge for 2 hours to “set.” Enjoy!
Optional: Soak the almonds the night before if you’d like to get the full nutrients, then rinse well and dry them in a dehydrator or in your oven (on lowest setting with the oven door open. If my kids are around, I usually don’t soak the almonds because it’s too hard to dry them in the oven with the door ajar.)
Enjoy this yummy, satisfying and healthy dessert!
