Thanks for visiting the blog. I plan to post some simple, healthy, tasty recipes in the upcoming months. Those of you who know me are probably surprised that I’m starting a food blog. Heck, I’m surprised that I’m starting a food blog! I don’t really like to cook, but I do try to eat healthy, and I do want to feed my family nutritious foods, so that’s why I’m starting the blog. : )

The GGSo Pleases Three

What is a GGSo? I’m so glad you clicked to find out. I won’t keep you waiting. It’s a Glowing Green Soup! This recipe is courtesy of the inspiring nutritionist Kimberly Snyder (kimberlysnyder.net). I have both of her books, and they are filled with easy, super nutritious recipes. I admit that this one didn’t sound very appetizing at first, but I was pleasantly surprised by the outcome.

Outcome: I loved it. It was tasty and surprisingly filling. My husband said it was good, and that it “tastes like lettuce,” but then he said he likes lettuce, so that was actually a compliment. : ) He did eat the whole bowl. My 1-year-old daughter loved it! My 4-year-old son tasted one bite and wasn’t a fan. Overall, I’d consider this recipe a success, and I do plan to make it again.

Prep Time: 10 minutes

(No cooking!)

Ingredients:

-1 cup unsweetened, plain rice milk (or almond milk)

-3 cups baby spinach (kale works too)

-2 cups tomatoes, rough chopped

-1/2 cup zucchini, chopped

-1 tbs. purple onion (optional)

-1 lime (optional)

-2 tbs. nutritional yeast

-1/4 tsp. sea salt, or to taste

-avocado, for topping

-cayenne pepper, for topping

Directions: Here is the best part… throw everything into the blender and mix it up! Blend to your desired texture. Save the toppings to throw on after. Since it’s warm out now, you can serve it at room temperature.
